PROCEDURE FOR OBTAINING OLEOGELS AS SUBSTITUTES FOR FAT SOLID, WITH APPLICATIONS IN FOOD, BIOMEDICINE, COSMETICS AND PHARMACY

CSIC has developed a procedure to obtain oleogels that allows the reduction of saturated and trans fats in food through the use of food grade gelling agents. This procedure also allows to incorporate other active substances with potential applications in pharmacy and cosmetic sectors.
Priority patent application filed suitable for international extension..
