New device for eliminating microorganisms in food using ultrasound and supercritical fluids

A new system, patented by the UPV, enables to inactivate the microorganisms in food with ultrasounds in a controlled atmosphere. In this way, a longer preservation of food is achieved, keeping their flavor, aroma, color, flavor and nutrients. By using low temperatures and pressures, the cost and time of the operation is reduced.
